Winemaking and Ageing
Fromm Chardonnay Clayvin Vineyard 2007 is a 100% Chardonnay wine. Grapes picked by hand, once in the cellar are destemmed and then pressed and lightly crushed.
The resulting must is transferred to French oak barrels for natural fermentation, later it's transferred to start its malolactic fermentation on its lees.
Finally, the wine is allowed to age in French oak barrels for 16 months before being bottled and left to mature for two more years in the bottle before being sold.
