Winemaking and Ageing

Saxenburg Private Collection Shiraz 2016 is a 100% Shiraz red wine. To produce the Saxenburg PC Shiraz, only selected vineyards for their quality are chosen (or part of them). The fermentation takes place in an open tank at 30ºC, with daily lifts.

The skin remain for 3 weeks in contact with the wort, to give it its special color. The wine, once aged, is not filtered or clarified, so that it remains totally natural. Aged for 12 months in American (80%) and French (20%) barrels of 300 liters, of which 20% are new barrels, 40% second year and 40% third year.

• Nose: On the nose stand out its aromas of ripe fruit, chocolate and a small hint of licorice.
• Palate: As it passes through the mouth we find those flavors of ripe fruit, slightly spicy, warm, a touch of coffee, in perfect equilibrium with the tannins, for a prolonged and exultant end of mouth.
