Winemaking and Ageing
Protocolo 2020 is made from tempranillo grapes covered by the V.T. of Castile.
In the process it has had a fermentation with a yeast selection (Saccharomycces Bayanus; own strain) for a period of 10 days, at a temperature between 25º and 28ºC.
