Elaboration and aging

Lavia + 2016 is a 100% organic Monastrell wine, from a selection of 41-year-old vineyards located at a high altitude. Destemmed and totally crushed. Tank filling by gravity.

It has a maceration process of 18 days and then a fermentation in wooden vats.
