Mestizaje 2017 is made mainly from the Bobal native variety and small portions of Merlot, Garnacha and Cabernet Sauvignon. Mestizaje processing begins with a vintage and manual selection in boxes of 15kg. Once in the winery each variety is vinified separately. First maceration is done in cold for 24 to 36 hours at a temperature of 8-10 ° C. Later the fermentation for 11-13 days with small pumping at a temperature of 26ºC. After the fermentation, a postfermentative maceration lasts between 5 and 8 days, and finally, to round off the wine, malolactic fermentation in barrels for another 4 weeks with periodical "batonnages" and aged in French oak barrels for 10 months.
Mestizaje 2017 is ideal with Asian cuisine, pasta, rice, sausages, cured cheeses not, mushrooms, poultry, white meats and salads.
