Finca Dehesa de los Canónigos sold all its grapes to Vega Sicilia, but the great quality of the fruit made Luis Sanz and Mª Luz Cid decide to build their own winery and release their first vintage in 1989.

Preparation and aging

Dehesa de los Canónigos 2020 is a blend of the Tinto Fino (88%) and Cabernet Sauvignon (12%) varieties. As for the production, the harvest and selection of the grapes was done manually.

Once in the winery, and after a traditional fermentation process, Dehesa de los Canónigos Crianza was aged for 15 months in medium-toasted, fine-grained American oak barrels.
