After the harvest, carried out manually, a destemming process is carried out. Each variety vinifies independently in stainless steel tanks. Enate Crianza beans undergo malolactic fermentation.\u003c\/p\u003e\n\u003cp\u003eThe two varieties of Enate Crianza, finally, age separately for nine months: the Cabernet Sauvignon does so in French oak barrels and the Tempranillo does so in American oak barrels.
