The Winery opened in 1992 in Pesquera de Duero, in one of the most important wine-growing areas of La Ribera.

Preparation and Aging

Hacienda Monasterio 2021 is made from the Tinto Fino variety (the most representative of Ribera), complemented with a small percentage of the Cabernet-Sauvignon and Merlot varieties. The grapes are harvested completely manually and transported to the winery in small plastic boxes. Once in the winery, only the clusters that are in the best conditions are selected. To make Hacienda Monasterio, after complete destemming, the grapes macerate for 24 days. Subsequently, fermentation is carried out only with the natural yeasts of the vineyard itself.

After vinification, Hacienda Monasterio spends 17 months in Allier French oak barrels (30% new barrels and 70% 3-wine barrels) with racking every 3 months.
