Hacienda Monasterio Crianza 2016 is made from the Tinto Fino variety, also known as Tempranillo or Tinta del País (the most representative from Ribera), complemented by a small percentage of the Cabernet-Sauvignon and Merlot varieties. The grapes are harvested completely manually and transported to the winery in small plastic boxes.
Once in the cellar, only bunches that are in the best conditions are selected for the elaboration of Hacienda Monasterio Crianza, after a complete destemming, the grapes macerate for 24 days. Subsequently, a fermentation is carried out only with the natural yeasts of the vineyard itself. After the winemaking, Hacienda Monasterio Crianza spends 17 months in Allier French oak barrels (30% new cask and 70% cask of 3 wines) with racking every 3 months.
