Finca Dehesa de los Canónigos sold all its grapes to Vega Sicilia, but due to the high quality of the fruit makes Luis Sanz and Mª Luz Cid decide to build their own cellar and take out their first vintage in 1989.
Winemaking and aging
Dehesa de los Canónigos Quinta Generación 2020 is a single varietal red wine made from Tempranillo grapes. The harvest is done manually, the fermentation lasts around 10 days and is carried out in stainless steel tanks with indigenous yeasts.
The aging of the wine lasts 4 months and is carried out in oak barrels, it is bottled filtered but not clarified and it spends another year in the bottle before going on the market.
