Winemaking and aging

The grapes enter healthy and dry, with good weather and without rain, with yields well below expectations. In the winery the grape movement is by gravity, without pumps, gently. The grapes arrive destemmed and whole to the deposit. Clarified with natural egg white.

The soils are chalky, sandy loam soils predominate, with stones and medium-sized pebbles. It ages for 12 months in French oak barrels of 225 liters, from different forests.
