Winemaking and aging
The grapes enter healthy and dry, with good weather and without rain, with yields well below expectations. In the winery the grape movement is by gravity, without pumps, gently. The grapes arrive destemmed and whole to the deposit. Clarified with natural egg white.
The soils are chalky, sandy loam soils predominate, with stones and medium-sized pebbles. It ages for 12 months in French oak barrels of 225 liters, from different forests.
Tomás Postigo 2021 Tasting Notes
- View: Tomás Postigo 2021 has a cherry red color, intense garnet edges and bright.
- Nose: Mature red and black fruit like plum, cherry and blackberry, mineral notes such as graphite combined with floral notes. Spicy with hints of pepper, subtle and assembled with toasted oak aromas, chocolate sensation and balsamic background. Consequently a very attractive wine, elegant and fresh.
- Palate: In the mouth it is a wine of great initial impact but its sweet and ripe tannins and its creaminess make it a tamed, round, broad and tasty wine. Retronasal loaded with aromatic nuances and flavors that remind us of toffee and cherries in liquor. soft and sweet, tasty and well structured
