Winemaking and aging
Pago de Carraovejas 2021 is a blend of 92% Tinto Fino, 5% Cabernet Sauvignon, 3% Merlot. The Pago de Carraovejas grape is selected in the field by the vineyard staff throughout the vegetative cycle of the plant. It is harvested by hand and arrives in a cellar in small, vibrant stainless steel trailers, which will spoil every movement of the grape. De-stemmed without squeezing, in very wide tanks for a better extraction of flavors, aromas and color.
Aging of 12 months in French and American oak barrels. Clarification with natural egg white.

- Nose: Notes of ripe fruits, dairy, balsamic notes and sweet spices.
- Palate: Meaty, structured, with power but civilized at the same time, ripe and round tannins that fill the whole mouth in a perfect and harmonious circuit. Balanced wine, frank and persistent.
