Winemaking and Aging

Pago de los Capellanes Crianza 2021 is 100% Tempranillo grapes. Harvest selected at the beginning of October. Once the grape is received in the cellar, alcoholic fermentation begins in a controlled manner, with the addition of selected yeast from the best vines for 30 days, with daily pumping over. The malolactic fermentation takes place without the addition of bacteria and the cellar is tempered at 20ºC for 24 days, controlling the levels of malic acid and lactic acid.

Aging for 12 months the wine rests with new barrels and 2 years of French oak of 300 liters of selected grain.

• View: Pago de los Capellanes Crianza 2021 has a very intense bright cherry color, with cardinal trim.
• Nose: The nose is very clean, with a good fruit-wood balance in which vanilla tones blend with ripe fruit, black fruits and forest. Leather and licorice notes typical of French Oak assembly with varietal aromas stand out.
• Palate: Soft, but filling the palate with balanced flavors and also perceiving fine tannins that will contribute to lengthen your life, to end with a long and elegant aftertaste.
