Winemaking and Ageing
Hacienda Monasterio 2020 is made from the Tinto Fino variety, also known as Tempranillo or Tinta del País (the most representative from Ribera), complemented by a small percentage of the Cabernet-Sauvignon and Merlot varieties. The grapes are harvested completely manually and transported to the winery in small plastic boxes.
Once in the cellar, only bunches that are in the best conditions are selected for the elaboration of Hacienda Monasterio, after a complete destemming, the grapes macerate for 24 days. Subsequently, a fermentation is carried out only with the natural yeasts of the vineyard itself. After the winemaking, Hacienda Monasterio spends 17 months in Allier French oak barrels (30% new cask and 70% cask of 3 wines) with racking every 3 months.

- Nose: Predominantly red fresh fruit. Very mineral with a touch of licorice closely integrated with the tertiary aromas from the barrel.
- Palate: Powerful and fruity entrance. Softer, silky leaves pleasant sensations of ripe fruit with rich mineral nuances. Polished tannins and well balanced acidity.
