Winemaking and Aging
Pago de los Capellanes Reserva 2019 is a Tempranillo monovarietal. After a selected harvest, it is transported in boxes of 15 kilograms, later it is taken to 20,000 liters tanks to carry out the fermentation.
Cold pre-fermentation for 6 days, followed by 20 days of alcoholic fermentation by sowing selected autochthonous yeasts from the best vines. The malolactic fermentation develops very slowly, tempering the cellar at 20ºC for 28 days, without the addition of bacteria.
The wine rests for 14 months in new barrels of fine grain French oak.
