Winemaking and Aging
Gaudium 2014 is made with 95% Tempranillo, 5% Graciano grapes. Manual harvest in boxes of 15 kg. The grapes are kept at 5-6ºC in cold chambers for 2 days in order to start a slow fermentation. A double selection of the grapes is then made. Alcoholic fermentation with whole grain and autochthonous yeasts, in small stainless steel tanks.
Malolactic in new French oak barrels with 2 weekly bâtonnage. Aged for 18-20 months in new French oak barrels.

- View: Gaudium 2012 has a very deep color almost black.
- Nose: Complex nose, rich in wild black fruits and fine spices that add intensity.
- Palate: Beautiful volume in the mouth. Elegant expression that is enriched with a tannic structure.

Gaudium 2014 is ideal to accompany grilled meats or in sauce, especially suckling pig, roasted kid, beef sirloin or Iberian pork, foie gras, light game and semi-hard or strong cheeses.
