Gaudium 2012 is made with 95% Tempranillo, 5% Graciano grapes. Manual harvest in boxes of 15 kg. The grapes are kept at 5-6ºC in cold chambers for 2 days in order to start a slow fermentation. A double selection of the grapes is then made. Alcoholic fermentation with whole grain and autochthonous yeasts, in small stainless steel tanks.
Malolactic in new French oak barrels with 2 weekly bâtonnage. Aged for 18-20 months in new French oak barrels.
