Barón de Ley Varietales Maturana 2016 is made with the Maturana grape variety, which is an autochthonous and almost lost variety, which this cellar has included in its varietals to contribute to its recovery.
Barón de Ley is located in the Monastery of Imas in Mendavia, restored in the years 95 and 96, its furniture and decoration take us to past centuries.
Winemaking and Aging
Barón de Ley Varietales Maturana 2016 is a varietal wine of Maturana grapes. The grapes come from their farm located around Mendavia.
The first fermentation takes place in stainless steel tanks, at a controlled temperature. The malolactic fermentation is carried out in the same tanks for 15 days at a temperature of 20ºC. Finally the aging takes place during 6 months in American oak barrels and 12 months in French oak barrels.
