Winemaking and Aging
Barón de Ley Varietales Garnacha 2015 is a single varietal Garnacha grape. The grapes come from the vineyards of Ausejo in the Rioja Alta.
First, fermentation takes place in stainless steel tanks for 7 days at 25ºC. The maceration lasts 3 days. The malolactic fermentation is carried out in the same tanks for 15 days at 20ºC. Finally the aging takes place in American oak barrels for 6 months and another 6 months in French foudre.
