Winemaking and Ageing
Dalmau 2014 is made 70% with Tempranillo grapes, 15% Cabernet Sauvignon, 15% Graciano. Manual harvest selected in small capacity boxes. Fermentation of each variety separately at controlled temperature for 11 days. The Tempranillo ferments in small stainless steel tanks and the Graciano and the Cabernet Sauvignon in a small oak barrel. Overpumping takes place with the aim of obtaining maximum extraction.
