Sánchez Romate Hnos, with more than 200 years is one of the oldest cellarss in Spain. Today it is one of the few cellars in Jerez that remains in the hands of Jerezanian families.
Elaboration and Aging
Cardenal Mendoza Brandy is made from the best holandas of alquitaras, aged through the traditional system of soleras and criaderas. This set of boots were previously kept in Oloroso and Pedro Ximénez, and form one of the largest wineries of Solera Gran Reserva. Bodegas Romate takes a very careful winemaking process from palomino, air and Pedro Ximénez grapes, with the white earth of albariza and the climate of Western Andalusia. The aging takes place in the American oak barrels and the distillation in copper alquitaras, the system of soleras and criaderas.
All these traditional methods are combined with new technologies to obtain an excellent and quality product.
