Winemaking and aging
Tritón 2019 is a single-varietal wine from Tinta de Toro. The grapes that make this wine come from 80-year-old vineyards planted on clay soil. The harvest is done by hand and is transported in boxes of 18 kilos. The climate that characterizes this area is characterized by large temperature changes between day and night, which causes the vineyards to be underperforming.
Fermentation takes place in open containers and malolactic fermentation in French oak barrels from Burgundy and Bordeaux with wild yeasts.
It undergoes an aging process of 8 months on lees, finally it is bottled without filtering or clarifying.
