Winemaking and Ageing
El Regajal Selección Especial 2021 is made from grapes grown in different places of the plot.The grapes come from young vines, planted with ecological systems, afterwards a maceration is carried out with the grape skin. Once macerated, each variety does the fermentation separately. Finally, once the coupage has been made, El Regajal rests for 13 months in French oak barrels. Bottling is done without filtering.
