Winemaking and Ageing
Portocelo Verdejo 2021 is a monovarietal of Verdejo grape 100% . After harvesting the grapes manually, it is subjected to a cold maceration. At 6ºC for 12 days. Later a very slow fermentation is carried out during 21 days, at a controlled temperature, in order to preserve all the flavors and aromas.
