Pago de Carraovejas was born in 1987 by José María Ruiz in the Ribera del Duero, specifically on the slopes of Carraovejas, in Peñafiel.

Pago de Carraovejas is located in Peñafiel on the slopes of Carraovejas, for three main reasons: first,  the Ribera del Duero was the area with best pojection, its climate and terrain , and for last because the slopes of Carraovejas are considered the best ripener of the region.

The first harvest was made in 1991 from the 25 hectares of vineyard, currently the winery has around 200 hectares.

The vineyard is 850 meters high, where three types of grape variety are cultivated: Tinto Fino, Cabernet Sauvignon and Merlot, cultivated through three different systems: Double Crodón Royat, Vertical Glass and Viticulture in Terraces.

The harvest is done manually, once in the winery the grapes spend one night at 5ºC to guarantee the optimal properties of the grapes in the fermentation. The fermentation is carried out in stainless steel tanks of 150Hl and 200HL for the alcoholic and malolactic fermentations respectively.

Finally, the aging process takes place in 3,000 new and semi-new French and American oak barrels of a maximum of three years of life. The time they remain in the barrels goes from 12 to 24 months depending on the wine.

Located on the slopes of Peñafiel, Pago de Carraovejas was the first in the Ribera del Duero to use the Cabernet up to 25%, to use French oak for its barrels and in drip irrigation. In 1991 they made the first harvest.
