Winemaking and Ageing
Enrique Mendoza Dolç de Mendoza 2014 is a coupage of Merlot, Cabernet Sauvignon, Syrah and Pinot Noir. The harvest is done at the beginning of December. Destemmed grapes are crushed and fermented in stainless steel tanks. When it reaches 14% vol. alcohol fermentation is stopped so that it is sufficient percentage of residual sugar that gives a suggestive natural sweetness. 10 months in French oak barrels of 500 liters. Bottled unfiltered clarify eventually can present sediments.
