The Chocolate Block 2015 is a blend of 73% Shyraz, 12% Cabernet Sauvignon, 10% Garnacha, 4% Cinsault, 1% Viognier. The harvest is carried out according to the maturity of the plants in the different vineyards and adjusting all the protocols and actions at the optimum harvest time. Grenache ripens in 600-liter barrels to maintain the fruity character of the variety.
Once the fermentation process is finished, the wine matures in new French oak barrels (for Cabernet Sauvignon) and for second and third years for 16 months. After this period it is subjected to filtration.
The Chocolate Block is ideal to accompany fatty fish, sweet sauces and stews.
