Winemaking and Ageing
Quincha Corral 2016 comes 100% of the variety Bobal. Manual harvesting in boxes of 15 kg. Cold maceration on vintage boxes at 6 ° C. Double selection table (bunches and berries), de-stemming, crushing mild. alcoholic fermentation in open barrels of 225 liters at 28 ° C for 12 days with manual "pigeage". Post-fermentation and maceration for 10 days. 18 months aging in French oak barrels of 225 liters.
