Chozas Carrascal Familiar Cabernet 2018

Cabernet Familiar de Chozas Carrascal 2018 is a single-varietal wine belonging to the DO Utiel Requena.

The Chozas Carrascal farm is located 700 meters above sea level, in San Antonio de Requena, between the towns of Requena and Utiel.

Preparation and aging

Cabernet Familiar de Chozas Carrascal 2018 is made with grapes harvested manually and selected grain by grain. It is vinified in a 100 Hl concrete tank with a maceration of between 2 and 3 weeks depending on the vintage. The flower wine undergoes malolactic fermentation in French oak barrels first used for red wines. These barrels have previously been used for fermentation and aging on white wine lees.

During the first months of aging, batônnage is carried out weekly. This wine remains in 220 liter barrels for 5-7 months depending on the vintage.
