Winemaking and Aging

Predicador 2020 is made from the Tempranillo variety and a pinch of the Garnacha variety. The grapes come from vineyards between 20 and 35 years old, from 12 different plots. The harvest is done manually in boxes of 14kg. Once the grapes are collected, they are transported to the cellar within a maximum period of half an hour to avoid oxidation. For the making of Predicador and after a careful destemming, the grapes ferment in trunk-conical and stainless steel tanks at a temperature of 19-24ºC for 7-10 days.

Finally, after the winemaking, Predicador passes a 15-month aging in French oak barrels of 1 wine.

• View: Predicador 2020 as a very intense cherry colour. High layer. Bright and with continuous tears, which ink the cup.
• Nose: Intense aromas. Good black fruit accompanied by spicy notes and aging. Balsamic touches that denote freshness.
• Palate: In the mouth, powerful entrance. In juicy step and very sweet. Fresh and with good acidity. Mineral aftertaste Long and very persistent.

Pairing

Predicador 2020 is ideal to accompany grilled red meats, civet, sheep cheeses and semi-hard cheeses.

It is recommended to serve this wine at a temperature between 17-18ºC.
