Winemaking and Aging
The wine goes through a fermentation of 8 days with native yeasts, to make the malolactic in barrel. Then it ages for 11 months in barrels, to be bottled without filtering, stabilizing or clarifying.
Avancia Mencía has its vineyards in Raxoá, Valle de Valdeorras, on the northeast side of Valdeorras. There are 6 hectares of old vines cultivated by the glass method in slate soils.
