Winemaking and Ageing

Las Moradas de San Martín La Sabina 2015 is made with a grape going through a double selection, in the field and in the winery before being destemmed.

The fermentation is done with native yeasts. It is aged for 14 months in French oak barrels, both new and used. After aging it remains for a month in stainless steel tanks before bottling. This wine is not subjected to any process or filtering, or clarified, nor contains sulfites.
