Elaboration and aging

Mo Salinas 2019 is made with the Monastrell, Cabernet Sauvignon and Alicante Bouschet grape varieties. From vineyards where the harvests are carried out manually and go through a selection table in the cellar. The harvest takes place from September to October.

The vineyards are located at a height of 650 meters of altitude, on stony soil and poor in organic matter. With limestone subsoil. The vineyards have a production of 2,000 kg / ha in Monastrell and Alicante Bouschet and 4,000 kg / ha in Cabernet Sauvignon.

It undergoes a 10-day maceration at a temperature of between 26-28ºC. Malolactic fermentation takes place in stainless steel tanks, and aging for 4 in French oak barrels.
