It is made using the traditional system of criaderas and soleras.

- View: Cedro Pedro Ximénez has a very dark ebony odor color, edged with iodized tones.
- Nose: It presents deep aromas of passion, with complex aging funds.
- Palate: The palate is very sweet, slightly acidic, smooth, with toasted flavors of magnificent structure, Caramel, coffee and raisins. Full, very tasty and with perfect balance of acidity-sugar. The passage through the mouth is smooth and the finish is long and persistent, with elegant bitter tones in the aftertaste.

Cedro Pedro Ximénez is ideal to accompany desserts and ice cream. It is recommended to serve at a temperature between 12º-14ºC.
