Elaboration

Brandy 1866 has a typical aging pattern of the DOs of Jerez and Montilla-Moriles. This curious way of "teaching" wines, rums and brandies to age, consists of emptying the American oak barrels of the oldest brandy and "renewing" it with young ones, while the old one is incorporated into another barrel of brandy. recent; so that different maturations are "mixed".
