Winemaking and aging

The first step of the elaboration consists of a maceration of the grape made at low temperature (14ºC), and that lasts for 6 days. The alcoholic fermentation takes place during 28 days, at a temperature of 26ºC, in cones of French oak wood with native yeasts of the own vineyard. Once the alcoholic fermentation is finished, it is transferred to new French oak barrels, where it undergoes malolactic fermentation for 20 days at a temperature of 22ºC.

Pago de los Capellanes El Nogal 2019 has an aging of 22 months in new French oak barrels of selected grain, rotating by 4 different types of oak. once the aging is finished, it is bottled without filtering or clarifying.
