Winemaking and Ageing
Artadi Pagos Viejos 2012 is a 100% Tempranillo monovarietal. Manual harvest in boxes of 15 kgs. Selection of bunches and berries. Vinification in open wooden tanks with cold maceration for 24-48 hours and fermentation for 10-12 days with two daily steps and a slight overpumping.
Aged for 15 months in French oak barrels.
