The Codorníu cava is aged for at least 9 months, it is made with the traditional varieties of D.O. Cava: Macabeo (acid and strong wines), Xarel·lo (contributes structure) and Parellada (adds subtlety).
The three varieties are worked in different ways: different fermentation temperatures, different racking and different times in contact with the lees. Once the fermentations of the three varieties are made, the resulting wines are stored in the cellars, where they remain in contact with the lees for at east nine months.
Pairing
Perfectly mixed with nuts, especially with almonds and walnuts, and ideal for aperitif time.
