Finca Azaya 2019 , with 14 months in barrel. It is a powerful but very tasty wine.

This family winery was created in Gumiel de Mercado, Burgos, in 1984 and is one of the oldest in the DO Ribera del Duero.

Preparation and aging

Finca Azaya 2019 is made with 100% Tinto Fino (Tempranillo) grapes. The grapes, harvested by hand in 14 kg boxes, fermented for 9 days between 23 and 28ºC temperature, followed by a 10-day maceration. A time in which, upon reaching the maximum fermentation temperature, the daily pumping over process is carried out.

The last step is to let the wine rest in oak barrels from two origins for a maximum of 14 months and then begin aging in the bottle.

Pairing

Finca Azaya 2019 is ideal with red meats, Iberian sausages, cheeses, blue fish, fried fish, and poultry.

It is recommended to consume it at a temperature between 11-12ºC and if the ambient temperature is higher than 22ºC it is recommended to take it at a maximum of 12ºC.
