Cava Conde de Haro Brut is a blend of Viura and Malvasía varieties. It is the same area as the vineyards of Prado Enea, high areas, but unlike these are slopes facing north with the aim of protecting the vineyards from the heat that could alter the delicate varietal aroma needed in cellars.
The grapes are harvested towards the third week of September. About 15 days before those dedicated to white wines. The harvest must be in boxes of 15 kilos to respect the integrity of the fruit. After going through selection, the bunches go to the press. The pressing is the most delicate moment to preserve the quality, only the must from the soft pressing is used to make this cava. The musts carry out a first fermentation in wooden tanks of 1,000 liters to be preserved until the end of April.
From here the second fermentation is caused in the bottle. The cava is kept in rhyme for at least 14 more months.
