Ficha de cata
Así lo catamos

Vista

Manzanilla La Guita comes from 100% Sanluqueña Palomino Fino grapes, mainly from Pago de Miraflores, one of the most prestigious vineyards in Sanlúcar.
Located in Sanlúcar de Barrameda, the foundation of Bodega Hijos de Rainera Pérez Marín dates back to 1852. Since that date, more than 150 years ago, they began to breed Manzanilla "La Guita", the emblem of the winery.
Preparation and aging
Manzanilla La Guita is one of the most famous Manzanilla in Spain. After the harvest, a light pressing is carried out from which the "yolk must" is obtained. This must undergoes fermentation in stainless steel tanks at a controlled temperature, becoming young wine. Once the wine has been selected, which must be clean on the nose, pale and light, it is fortified to 15º before becoming part of the Criaderas and Soleras system.
The aging takes place under the "flor", a layer of yeast that forms inside the barrel, above the wine. These yeasts act by consuming alcohol and other nutrients and providing very characteristic aromas and flavors.
