Description

Cava Tantum Ergo in a cardboard box is a white sparkling wine with Designation of Origin Cava (Spain), produced by Bodegas Hispano Swiss, the best batch of cava for this Christmas.

It is a wine made with Pinot Noir and Chardonnay grapes, which has received an award in the SEVI Guide 2019 for Best Rosé Cava in Spain and in the Peñín Guide 2019 for Best Cava in Spain.

Try it in Copa de Balón and enjoy an aromatic, creamy sparkling wine with a long finish.

Elaboration

The Cava Tantum Ergo in a cardboard box begins with the selection of the best low-production grapes from the vineyards of the respective grape varieties, -density of 3,500 plants/ha.-. Each grape variety is harvested in 15kg boxes. Furthermore, it is harvested only in the morning, since in this way a good temperature is maintained in the grapes until they reach the winery.

In the winery they are placed in a cold room, which keeps the grapes at a temperature of -10ºC.

The varieties are vinified separately. The Chardonnay is destemmed and crushed. The paste obtained is sent to a stainless steel tank where it macerates at a controlled cold temperature (8ºC) for 24 hours. On the other hand, the Pinot Noir is vatted very cold on the pneumatic press, which performs a light pressing to obtain the white must. Subsequently, the must is extracted from the press and kept statically for 36 hours, until only the clean part of the must is sent to ferment.

Fermentation takes place in 400-liter American oak barrels at a temperature of 16ºC. The final blend is kept on the lees until filtered.

The second filtration is done in the bottle at 16ºC, maintaining the temperature constant to achieve a slow fermentation. In this way, a good integration is achieved, which is reflected in the fine bubble. Aging on lees is a minimum of 22 months and disgorging is manual.

Consumption recommendation

This type of white cava goes very well with an aperitif, although foods such as sushi, salmon tartare, acorn-fed ham and rice are perfect. It should be served at 8ºC.

Marc Grin, Pablo Ossorio and Rafael Navarro, creators of the winery, are committed to exposing the artisanal history of the production of their wines with the incoming modernity through the most modern machinery. Curiously, they show the same thing with the façade of the winery itself, which they have left intact since 1905, but they have rebuilt the entire production process.

The production area of ​​these wines is characterized by the Cava Denomination of Origin, whose climate is continental with influences from the Mediterranean and limestone-clay soils, a factor that provides great properties to its vineyards.

Chardonnay is a green-skinned grape variety used to make white wine. It is native to the Burgundy wine-growing region in eastern France. It is characterized by its easy cultivation and its ability to adapt to different conditions.

Pinot Noir (Blanc de Noir) is a red grape variety that is mainly used to make sparkling wines. When young, pinot noir wines tend to have aromas of red fruits, such as cherries, raspberries, and strawberries. As they age, they may develop vegetal aromas.
