Vista

Elaboration
The Cava Tantum Ergo begins with the selection of the best low-production grapes from the 100% Pinot Noir vineyards, -density of 3,500 plants/ha.- . The grapes are harvested in 15kg boxes. It is harvested only in the morning, since in this way a good temperature is maintained in the grapes until they reach the winery.
In the winery they are placed in a cold room, which keeps the grapes at a temperature of -10ºC.
Box by box it is destemmed and crushed. The paste is placed in a stainless steel tank with a cooling system to carry out a cold maceration (4ºC) for a maximum of two hours, to obtain the exact color sought.
Subsequently, the must is extracted from the press and kept statically for 24 hours, until only the clean part of the must is sent to ferment.
Fermentation takes place in 400-liter American oak barrels at a temperature of 16ºC. It remains on the lees until it is filtered.
The second filtration is done in the bottle at 16ºC, maintaining the temperature constant to achieve a slow fermentation. In this way, a good integration is achieved, which is reflected in the fine bubble. Aging on lees is a minimum of 22 months and disgorging is manual.
