Winemaking and Aging
Lalomba Rosé 2020 is made with 90% Garnacha and 10% Viura. Manual harvest of bunches in small boxes of 15 kgs. They were refrigerated and transported to the winery where they remained in a cold environment for another 24 hours.
Then they go through the optical selection table, obtaining the best selection of the grapes, whole and in perfect condition. Later it's taken to the press, where in an inert environment, the maceration began.
After six hours and after several samplings, the winemakers decant to obtain the must by the traditional bleeding method by gravity, without automatic pressing. The yield is about 40%.
This must is transferred to a stainless steel tank where it is allowed to defrost for 24 hours, after which the clean must is collected to ferment for twenty days at less than 15º to preserve the most delicate aromas to the maximum. Once the fermentation is complete, the wine is racked for a subsequent maceration with the fine lees for about a month.
